DATA SHEET DONNA DI ROSE: Rosé Sparkling Wine, Brut, Martinotti Method  Grape variety: 100% Nero d'Avola Training system: Guyot Harvest: The grapes are harvested by hand in 16 kg crates during the second decade of August.  Vinification, ageing, and sparkling process The grapes undergo a soft pressing. The must obtained is decanted cold to obtain the best clarity, then sent for alcoholic fermentation at a temperature of 14-15°C. The wine obtained is matured for 2-3 months in stainless steel tanks, then clarified and cold stabilised before being filtered. The filtered base wine is transferred into an autoclave, together with the necessary amount of sugar (concentrated grape must sugar required for the formation of 6 atmospheres), yeast and nutrients for sparkling wine. The resulting sparkling wine is matured in the autoclave for 5-6 months, then filtered and bottled.  

TASTING SHEET: The Nero d'Avola Rosé sparkling wine made with the Martinotti method of extended maturation exudes an air of elegance and finesse, characteristics that are reflected in its persistent effervescence on tasting. With a delicate blush pink hue, this sparkling wine reveals subtle floral and fruity notes on the nose, including hints of rose, wild strawberry and pink grapefruit, complemented by herbaceous nuances of tea leaves and mint. The palate offers an extremely pleasant experience, enticing one to move on to the next sip with a refreshing sensation resulting from the harmonious interplay of acidity and minerality. This wine proves versatile for various occasions, pairing perfectly with aperitifs, seafood starters, seafood pasta such as spaghetti allo scoglio and raw fish preparations.
