Vinification and refinement: The grapes are harvested in the 3rd decade of August after destemming, the crushed grapes are cryomacerated for 3 hours at a temperature of 8-10 ° C. The must obtained is cold decanted and after clarification it is fermented at a temperature of 12-14 ° C. After fermentation, the wine is decanted into airtight tanks, where the residual sugars are transformed into CO2, defining the perlage.

Description: Brilliant straw yellow color with greenish reflections. The nose is surprising, elegant notes of white wild flowers alternate with apple fruit and citrus notes. It strikes the elegance on the palate with the
fine perlage. Perfect natural sparkling wine without the addition of carbon dioxide, as an aperitif, but also with challenging dishes.

How to serve: the best serving temperature is around 7-8° C.
